In the hit documentary series Chef's Table, four episodes were devoted to exceptionally talented French chefs. Among them, Alexandre Couillon and his restaurant La Marine, which he runs with his wife Céline in Noirmoutier-en-l'île (Vendée). Since its opening in 1999, after inheriting the establishment from his parents, the chef has always followed a strict morning ritual: every day, at dawn, he chooses the pick of the fish landed at the port, and the best vegetables from his very own vegetable garden. With these local foods, he offers a “marine and plant-based” cuisine that aims to be especially mindful of its environment.

The perfection of the cooking of its fish, and the care given to the coulis, juices and vegetable reductions certainly amazed the Michelin Guide team, when they recently came calling. Alexandre Couillon was the only chef to win a third star in the 2023 Michelin Guide. It is enough to make you want to take a trip all the way to the very end of the magnificent island of Noirmoutier to sample the delicious flavors for yourself.

In September 2016, Netflix invited you to discover the incredible story of the Troisgros family, a generation of chefs from the Roanne region (Loire). Michel, third generation chef to carry the name, speaks of his passion, his creative process and his desire to go beyond salmon with sorrel, the famous dish that was the making of the reputation of Maison Troisgros, a symbol of French cuisine for almost 100 years now.

In 2017, the family moved its main restaurant to Ouches, a few kilometers from Roanne, and inaugurated Le Bois Sans Feuille. Michel gave up his place to his son, Caesar. Having been trained at the Bocuse Institute, and now under the caring eye of his father, he offers a three-star menu, which varies according to the inspiration of the day, which might include caramelized porcini mushroom cap, pigeon with cocoa and capers and chocolate narcissus. Surely enough to perpetuate the Troisgros legend.

Do you remember that day when Emily Cooper, arriving in a splendid Provençal restaurant with Gabriel, confused her seat with a stool intended for her handbag? In Emily in Paris, the establishment is called L'Esprit du Lubéron, and is a source of inspiration for Gabriel and his own projects as a chef. But in reality, the venue is Le Clover, inaugurated in 2019 in Gordes, a magnificent fortified village in Lubéron, and run by Jean-François Piège, renowned Michelin-starred chef.

Its customers can delight in a menu that is very much rooted in its territory, with aioli, lamb stew, or even Mediterranean amberjack on the embers. And if the local goat's cheese marinated in olive oil and herbs has not satisfied you, there's nothing better than concluding your culinary escapade with a hot soufflé with Menton lemons, gently fanned by the light breeze that slips under the pergola of the terrace, with its exceptional views across the valley.
